Fo 02 Try to make sugar crystals from sugar-cane juice

Around 1100 a. Chr. Knights of the Cross reported about cultivating and processing sugar-cane in Palestine.
* Left and photo 2: Chew the marrow and collect the juice in bottles.
* Photo 3: By boiling the juice you concentrate it and bacteria are killed. You will obtain 30 ml of syrup from 200 ml juice.
* Photo 4: Fix a small sugar candy by a thin copper wire and dip it into the sugar syrup.
* Observation right:  After one month the crystal has grown, the wire has disappeared inside the crystal.
* Explanation: A huge number of invisible sugar particles have collected on the surface of the growing sugar crystal. In Germany you might buy sugar-beet syrup for this experiment.
